Wonderful Snow Cloud Dessert (No-Bake Coconut Pudding)

  1. Dissolve the gelatin:
    In a bowl, pour the hot water over the coconut gelatin powder. Stir until fully dissolved and smooth. Set aside to cool slightly, but do not let it set.
  2. Blend the mixture:
    In a blender, combine the dissolved gelatin, condensed milk, heavy cream, regular milk, and shredded coconut. Blend for approximately 3 minutes until smooth and fully combined.
  3. Chill:
    Lightly grease a bundt pan or mold with a few drops of neutral oil to help with unmolding later. Pour the blended mixture into the mold.
  4. Refrigerate:
    Place in the refrigerator for at least 3 hours, or preferably overnight, until firm and set.
  5. Unmold and garnish:
    Run a knife gently around the edges if needed and invert onto a serving plate. Sprinkle extra shredded coconut over the top before serving.
