Triple Crust Peach Cobbler Recipe

  • 3 cups all-purpose flour
  • 1 cup unsalted butter (cold and cubed)
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup ice water

  1. Prepare the Peach Filling: In a large bowl, combine the peaches, sugar, flour, cinnamon, lemon juice, and nutmeg. Stir to coat and let rest while you prepare the crust.
  2. Make the Crust: In another bowl, whisk together the flour, sugar, and salt. Cut in the cold, cubed butter until the mixture resembles coarse crumbs. Gradually add the ice water and mix just until the dough comes together. Divide the dough into three equal portions, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Assemble the Cobbler:
    • Preheat the oven to 375°F (190°C).
    • Roll out one portion of dough and place it into the bottom of a baking dish.
    • Spread half the peach mixture over the crust.
    • Roll out the second portion of dough and place it on top of the peaches. Add the remaining peach filling on top.
    • Roll out the final dough portion and place it over the top. Crimp the edges to seal and cut a few slits in the top crust for venting steam.
  4. Bake: Bake for 45–55 minutes, or until the top crust is golden brown and the peach filling is bubbling.
  5. Cool and Serve: Allow to cool for at least 15 minutes before serving. Great with vanilla ice cream or whipped cream!
