🍋 Lemon Swiss Roll
Ingredients:
For the Cake:
- 4 large eggs
- 1/2 cup granulated sugar
- 2/3 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tbsp vegetable oil
- 2 tsp lemon zest
Filling:
- 3/4 cup heavy cream whipped with 1 tbsp sugar
Instructions:
- Preheat oven to 180°C (350°F) and line a tray with parchment.
- Beat eggs and sugar until thick and pale.
- Sift dry ingredients and fold into the egg mixture.
- Add oil and lemon zest; mix gently.
- Spread into the tray and bake for 10–12 minutes.
- Roll in parchment while warm. Let cool completely.
- Unroll, add whipped cream, roll again, chill, and serve.
