Swicy Caramelized Feta with Orange & Chili

Instructions

  1. Prepare the feta: Gently pat the block of feta dry using a paper towel to remove excess moisture. This step is important to encourage even caramelization and reduce sputtering when it hits the hot pan.
  2. Heat the skillet: In a non-stick or cast-iron skillet, heat 1 tablespoon of olive oil over medium heat until shimmering. If the feta is especially firm or your skillet is larger, use up to 2 tablespoons to prevent sticking.
  3. Sear the feta: Carefully place the block of feta in the skillet. Sear for 2–3 minutes on each side, or until the surface turns golden brown with lightly crisped edges. Use a thin spatula to flip it gently to avoid breaking the cheese. Feta won’t melt like other cheeses, but will soften and develop a creamy interior while holding its shape.
  4. Make the swicy glaze: Once both sides of the feta are golden, reduce the heat slightly and add the honey directly into the skillet, drizzling it evenly around the feta. Immediately sprinkle in the finely chopped red chili (or chili flakes), ground cinnamon, and fresh thyme if using. The honey will begin to bubble and thicken into a fragrant glaze within 30–60 seconds.
  5. Glaze and coat: Using a spoon, baste the feta with the hot honey mixture as it thickens. Continue gently spooning the glaze over the top of the cheese for another 1–2 minutes, allowing it to caramelize slightly without burning. The honey should become glossy and amber-toned.
