Spicy Southwest Chicken Salad – Zesty, Fresh & Protein-Packed

🥗 Salad Assembly

Salad Base:

  • 4 cups mixed greens (romaine, spinach, or lettuce)
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh, canned, or grilled)
  • 1 cup black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup shredded cheddar or pepper jack cheese

Assembly Instructions:

  1. Layer mixed greens in a large bowl or on individual plates.
  2. Arrange tomatoes, corn, black beans, bell pepper, avocado, and red onion over greens.
  3. Add sliced grilled chicken and sprinkle with shredded cheese.
