Spicy Southwest Chicken Salad – Zesty, Fresh & Protein-Packed

🥩 Chicken Marinade

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
  • Juice of ½ lime

Instructions:

  1. Mix all marinade ingredients in a bowl.
  2. Coat chicken evenly and let marinate while prepping other ingredients.
  3. Grill or pan-sear over medium-high heat, 6–7 minutes per side, until cooked through (internal temp 165°F/75°C).
  4. Let rest for 5 minutes, then slice thinly.
