Southern Banana Cobbler

Prepare the oven and pan

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or a deep 8×8-inch pan to prevent sticking and ensure easy serving.

Make the banana filling

In a medium bowl, gently toss the sliced bananas with brown sugar, cinnamon, nutmeg, and lemon juice. Stir carefully to coat the bananas without mashing them. Set aside so the bananas can release their natural juices and absorb the warm spices.

Mix the cobbler batter

In a separate bowl, whisk together the flour, granulated sugar, baking powder, and salt. Slowly stir in the milk and vanilla extract until the batter is smooth and lump-free. The batter should be pourable but slightly thick.

Layer the cobbler

Pour the melted butter directly into the prepared baking dish, spreading it evenly across the bottom. Without stirring, pour the batter evenly over the butter. Gently spoon the banana filling over the top of the batter, distributing it evenly. Do not mix—the layers will shift naturally as the cobbler bakes.
