Sesame Rice Balls with Soy Dipping Sauce

1️⃣ 🍚 Rinse the Rice

Rinse the rice under cold running water, gently rubbing it between your hands until the water runs nearly clear. Drain thoroughly. This step ensures the rice cooks to the perfect sticky-yet-fluffy texture.

2️⃣ 🔥 Cook the Rice

Add the drained rice and 420 ml water to a saucepan. Cover with a tight-fitting lid. Bring to a boil, then reduce to a low simmer. Cook undisturbed for 12–15 minutes, or until all water is absorbed.

3️⃣ 🕒 Let It Rest

Remove the saucepan from heat and let the rice rest, still covered, for 10 minutes. This allows the steam to finish the cooking process and gives the rice ideal consistency for shaping.

4️⃣ 🧂 Season the Rice

Transfer the warm rice to a large mixing bowl. Add salt and rice vinegar, and gently mix using a spatula or wooden spoon in a cutting motion to avoid smashing the grains.

5️⃣ 🌰 Add the Flavor

Add white sesame, black sesame, and chili flakes. Mix gently to evenly distribute the flavors throughout the rice.

6️⃣ ✋ Shape the Balls

Dampen your hands with water to prevent sticking. Scoop out a portion of rice (about 2 tablespoons) and shape into a compact ball or oval. Repeat until all rice is used.
