How to Prepare the Scones
Follow these steps to make a perfect batch of scones:
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
In a large mixing bowl, whisk together the flour, baking powder, and sugar until well combined.
Add the baking margarine to the flour mixture. Using your fingers or a pastry cutter, rub the margarine into the flour until the mixture resembles coarse crumbs. This step is key to creating a flaky scone.
Stir in the orange zest and raisins. Distribute them evenly throughout the mixture.
In a separate bowl, whisk together the amasi, orange juice, vanilla essence (if using), and 2 of the eggs.
Gradually pour the wet ingredients into the dry ingredients, stirring gently with a wooden spoon or spatula until a soft dough forms. Do not overmix, as this can make the scones tough.
Turn the dough out onto a lightly floured surface. Gently knead it a few times to bring it together, then pat it out to a thickness of about 1 inch.
Using a round cutter or a glass, cut out scones and place them on the prepared baking sheet.
Beat the remaining egg and brush it over the tops of the scones for a beautiful golden finish.
Bake for 15 to 20 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.
Transfer the scones to a wire rack to cool slightly before serving.
