1ļøā£ Make the Batter
- In a blender, combine the eggs, oil, milk, salt, and grated cheese (if using). Blend until smooth.
- With the blender on low speed or using the pulse function, gradually add the flour until well incorporated.
- Finally, add the baking powder and mix just to combine ā do not overblend at this stage.
2ļøā£ Prepare the Filling
- In a bowl, combine the shredded chicken with tomato, onion, corn, peas, olives, parsley, and seasonings to taste.
- If using, mix in the cream cheese or Catupiry to create a creamy texture.
3ļøā£ Assemble the Cake
- Grease a medium baking dish (rectangular or round) with oil or butter and dust lightly with flour.
- Pour in half the batter and spread evenly.
- Distribute the filling evenly over the batter.
- Cover with the remaining batter, spreading carefully to seal the top.
