👨🍳 Instructions
- Prepare the onions: Peel and thinly slice the red onion. Place the slices in a clean 16 oz glass jar or heat-safe container. If using, add garlic, peppercorns, or other spices directly to the jar.
- Make the brine: In a small saucepan over medium heat, combine apple cider vinegar, water, sugar, and salt. Stir occasionally until the sugar and salt dissolve fully—do not let it boil.
- Pour & submerge: Carefully pour the hot brine over the onions in the jar, making sure all pieces are submerged. Use a spoon to press the onions down if needed.
- Cool & refrigerate: Let the jar cool uncovered to room temperature. Then, seal with a lid and refrigerate. Onions are ready after 1 hour but taste best after several hours or overnight.
