1. Prepare the Dough:
- In a mixing bowl, combine the flour, baking powder, and salt.
- Add the yogurt and olive oil to the bowl. Mix with a spoon or your hands until a shaggy dough forms.
- Transfer the dough to a lightly floured surface and knead gently until smooth and pliable, about 1ā2 minutes.
2. Roll and Shape:
- Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
- Roll the dough out to about 1.5 cm (½ inch) thick using a rolling pin.
- Cut circles using a cookie cutter or glass (about 5ā6 cm wide). Gather and re-roll scraps as needed.
3. Glaze and Top:
- Arrange the rolls on the prepared baking sheet, spacing slightly apart.
- Brush the tops with the beaten egg yolk.
- Sprinkle generously with poppy seeds or sesame seeds.
