- Preheat the oven:
Set your oven to 500°F (260°C). Make sure it’s fully preheated before roasting—the high heat is essential for forming a crust. - Season the roast:
Pat the roast dry with paper towels. Generously season all sides with garlic powder, onion powder, salt, and pepper. Rub it in to coat evenly. - Roast at high heat:
Place the seasoned roast in a roasting pan or baking dish, fat side up. Roast at 500°F for exactly 5 minutes per pound (for a 3 lb roast, roast for 15 minutes). - Turn off the oven:
Once the roasting time is complete, turn the oven OFF. Do not open the oven door. Let the roast remain in the closed oven for 2 hours. This slow residual heat gently finishes the cooking process. - Rest and serve:
After 2 hours, remove the roast and slice. The interior should be a perfect medium-rare to medium, depending on your oven and roast size.
