1️⃣ Prepare the Chicken:
- In a shallow bowl, mix together Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
- In a separate bowl, whisk the eggs.
- Dip each chicken cutlet into the egg mixture, then coat thoroughly in the Parmesan-breadcrumb mixture. Press gently to adhere.
- Heat olive oil in a large skillet over medium heat. Cook the chicken for 4–5 minutes per side, or until golden brown and cooked through (internal temp: 165°F/74°C).
- Transfer the cooked chicken to a plate and keep warm.
2️⃣ Make the Creamy Garlic Sauce:
- In the same skillet, melt the butter over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant (do not brown).
- Pour in chicken broth and bring to a gentle simmer, scraping up any browned bits from the pan.
- Add heavy cream, Parmesan, Italian seasoning, salt, and pepper. Stir until smooth and let simmer for 3–5 minutes, or until slightly thickened.
