Mousseline Brioche (Light Brioche)
Ingredients for 12 people:
– 350g flour
– 2 tbsp cold water
– 20g baker’s yeast
– 70g caster sugar
– 170g melted butter
– 1 tsp salt
– 4 whole eggs
for gilding:
– 1 egg yolk + 1 tbsp milk
– pearl sugar
