Mousseline brioche, light brioche


Place the flour, salt, and sugar in the food processor bowl and mix quickly.

Step 3:
Then add the dissolved yeast, eggs, and melted butter.

Step 4:
Let it run for 20 minutes without adding any more flour at speed 2 (approximately 30 minutes for me).

Step 5:
You can also make it by hand by kneading it well until it comes away from the work surface.

Step 6:
Lightly flour the surface of the dough and place it in a floured bowl.

Step 7:
Cover it with cling film and refrigerate overnight or for a minimum of 6 hours.

Step 8:
The next day, deflate the dough and then roll it out on a floured work surface into a rectangle 1 cm thick.
