Mimosa Eggs with Salmon Caviar & Crispy Bacon

  1. Place the eggs in a saucepan of cold water. Bring to a gentle boil, then cook for 10 minutes.
  2. Drain and transfer immediately to a bowl of cold water to cool completely. Peel carefully once cooled.

2️⃣ 🔪 Prepare the Egg Whites

  1. Slice each egg in half lengthwise. Gently remove the yolks and set the whites aside, hollow-side up, on a plate or platter.

3️⃣ 🥣 Make the Filling

  1. Mash the yolks with a fork until fine and crumbly.
  2. Add mayonnaise, mustard, salt, and pepper. Stir until you have a creamy, smooth filling.

4️⃣ 🌿 Season the Filling

  1. Stir in chopped chives and a pinch of paprika or sweet chili. Taste and adjust the seasoning as needed.

5️⃣ 🥓 Cook the Bacon

  1. In a dry skillet, cook the bacon over medium heat until crisp and golden.
  2. Drain on paper towels, then chop or crumble into small bits.
