Marinated Cheese & Salami Jar Bites

  1. Prep the main ingredients:
    Cut the cheese into even ½-inch cubes for consistent marinating. Slice the salami into bite-sized rounds or small wedges. Drain the olives and slice the pickles or cornichons if using.
  2. Mix the marinade:
    In a small bowl or measuring cup, whisk together the olive oil, red wine vinegar, and chopped parsley. For extra flavor, you can also add a pinch of red pepper flakes, a clove of minced garlic, or a few thyme leaves.
  3. Combine in a bowl or jar:
    In a large mixing bowl, gently toss together the cheese, salami, olives, and pickles. Pour the marinade over the mix and stir to coat all ingredients evenly.
  4. Pack into jars:
    Spoon the mixture into clean glass jars (4 to 6 oz size is ideal for individual portions), layering so that each jar gets a balanced mix of cheese, meat, and briny bites. Pour remaining marinade over the top to keep everything coated.
