- Preheat oven: Set oven to 350°F (175°C). If using a cast iron skillet, place it in the oven while it preheats to get it hot before adding the meatloaf.
- Mix the base: In a large bowl, whisk the eggs. Add the onion, salt, pepper, Worcestershire sauce, and 1 cup of ketchup. Stir to combine.
- Add the meat and oats: Add the ground beef and oats to the bowl. Use a wooden spoon or your hands to mix thoroughly. Fold in optional garlic and tomatoes here if using.
- Shape and bake: Remove the preheated cast iron skillet, spray lightly with olive oil or brush with a neutral oil. Transfer meat mixture into the skillet or press into a greased 9×5 loaf pan. Bake for 1 hour.
- Top it off: While the meatloaf bakes, mix ⅓ cup ketchup and brown sugar to make the glaze. After 1 hour of baking, remove the meatloaf, spread the topping evenly across the top, and return to the oven for another 25 minutes.
- Rest and serve: Let rest for 10 minutes before slicing for best texture. Serve with mashed potatoes, green beans, or your favorite side.
