Loaded Potato & Meatloaf Casserole

👩‍🍳 Directions

1️⃣ Prepare the Meatloaf Layer:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine ground beef, chopped onion, minced garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper.
  3. Press the mixture evenly into the bottom of the prepared dish to form the meatloaf base.
  4. Spread the ketchup evenly over the top of the meat mixture.
  5. Bake uncovered for 25 minutes.

2️⃣ Make the Mashed Potato Layer:

  1. While the meatloaf bakes, boil sliced potatoes in salted water for about 15 minutes or until fork-tender.
  2. Drain and mash the potatoes with sour cream, milk, and butter until smooth. Season with salt and pepper to taste.

3️⃣ Assemble the Casserole:

  1. Remove the partially baked meatloaf from the oven. Carefully spread the mashed potatoes evenly over the top.
  2. Sprinkle shredded cheddar cheese over the mashed potatoes, followed by chopped green onions.
  3. Return the casserole to the oven and bake for an additional 20 minutes, or until cheese is melted and bubbly.
