Loaded Potato & Meatloaf Casserole Recipe

Directions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish to prepare for the casserole.
  2. Prepare the Meatloaf: In a large bowl, combine 1.5 pounds of ground beef, 1 finely chopped onion, 2 cloves of minced garlic, 1/2 cup of breadcrumbs, 1/4 cup of milk, 1 egg, 1 tablespoon of Worcestershire sauce, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Mix until well combined.
  3. Assemble the Meatloaf Layer: Press the meat mixture evenly into the bottom of the greased baking dish. Spread 1/2 cup of ketchup over the top of the meatloaf, smoothing it out with a spatula.
  4. Bake the Meatloaf: Bake the meatloaf in the preheated oven for 25 minutes to allow the meat to cook through and the flavors to meld.
  5. Prepare the Potato Layer: While the meatloaf is baking, peel and slice 2 pounds of potatoes. Boil them in a pot of water until tender, about 15 minutes. Drain the potatoes and mash them with 1/2 cup of sour cream, 1/4 cup of milk, and 2 tablespoons of butter. Season with salt and pepper to taste. The mashed potatoes should be smooth and creamy.
  6. Assemble the Casserole: Once the meatloaf is partially cooked, remove it from the oven. Spread the mashed potatoes evenly over the top of the meatloaf. Sprinkle 1 cup of shredded cheddar cheese over the potatoes and top with 1/4 cup of chopped green onions.
  7. Finish Baking: Return the casserole to the oven and bake for another 20 minutes, or until the cheese is melted and bubbly. The casserole should be golden brown on top and ready to serve!
  8. Rest Before Serving: Allow the casserole to rest for 10 minutes before slicing and serving. This will help the layers set and make it easier to cut into neat portions.
