This Loaded Potato & Meatloaf Casserole makes a satisfying meal all on its own, but it also pairs wonderfully with a side salad or steamed vegetables for added freshness.
Storage:
- Store any leftovers in an airtight container in the refrigerator for up to 3 days.
- You can also freeze this casserole for up to 2 months. After baking, allow it to cool completely, then cover tightly with plastic wrap and foil before freezing. To reheat, bake in the oven at 350°F (175°C) for about 30 minutes, or until heated through.
Tips:
- For extra flavor, add a bit of grated Parmesan cheese to the mashed potatoes before spreading them over the meatloaf.
- If you prefer a spicier version, add some diced jalapeños or a pinch of red pepper flakes to the mashed potatoes or the meat mixture.
- You can make this casserole ahead of time. Simply assemble the dish, cover it, and refrigerate for up to a day before baking. You may need to adjust the baking time if it’s chilled.
