Light Cheese Vegetable Gratin

Preheat your oven to 190°C (375°F). This ensures even cooking and a golden top.

2️⃣ 🥔 Prepare the Vegetables

Peel the potatoes and carrots, then slice both thinly — ideally using a mandolin for uniform slices. This helps them cook evenly and quickly.

3️⃣ 🧄 Prep the Gratin Dish

Peel the garlic clove and rub it over the base and sides of your gratin dish for a subtle aroma. Then lightly oil the dish with the olive oil.

4️⃣ 🥘 Layer the Vegetables

Alternate layers of sliced potatoes and carrots in the dish. After each layer, season lightly with salt, pepper, and herbs. Continue layering until all vegetables are used.

5️⃣ 🥛 Add Milk & Cheese

Pour the milk evenly over the top to keep the vegetables tender and moist while baking. Sprinkle the grated cheese over the surface, covering evenly.

6️⃣ 🔥 Bake

Bake for about 40 minutes, or until the vegetables are soft and the cheese is golden and bubbling. If the top browns too quickly, loosely cover with foil during the last 10–15 minutes.

7️⃣ 🌿 Finish & Serve
