Lebanese Menu “Gourmet Cedar” Platter

1️⃣ 🥗 Prepare the Tabbouleh

  1. Soak bulgur wheat in cold water for 10 minutes. Drain well.
  2. Finely chop parsley, mint, and red onion. Dice tomatoes.
  3. Mix bulgur with chopped vegetables, lemon juice, olive oil, and salt.

2️⃣ 🧄 Make the Hummus

  1. In a blender or food processor, combine cooked chickpeas, tahini, lemon juice, garlic, salt, and a drizzle of olive oil.
  2. Blend until smooth and creamy. Add a splash of water if needed to adjust consistency.

3️⃣ 🌶️ Prepare the Muhammara

  1. Blend roasted red peppers, walnuts or pine nuts, garlic, chili, a bit of olive oil, and salt into a thick paste.

4️⃣ 🍗 Marinate the Chicken

  1. Cut chicken into bite-sized pieces. In a bowl, mix with lemon juice, olive oil, garlic, paprika, salt, chopped parsley, and cilantro.
  2. Let marinate for at least 30 minutes.

5️⃣ 🔥 Cook the Chicken

  1. Heat a skillet or grill pan over high heat. Cook the chicken pieces until golden brown and cooked through (approx. 6–8 minutes total).

6️⃣ 🧀 Grill the Halloumi

  1. Slice halloumi into thick strips. Dry-grill in a nonstick pan until golden on both sides (about 1–2 minutes per side).
