Step 1: Sauté the veggies
Heat the olive oil or butter in a large skillet over medium heat. Add the sliced onions and capsicum, seasoning lightly with salt and black pepper. Sauté for 5–7 minutes, stirring occasionally, until the vegetables soften and begin to caramelise. They should be tender with lightly golden edges.
Stir in the minced garlic and cook for about 30 seconds, just until fragrant. Remove the vegetable mixture from the pan and set aside, keeping it warm.
Step 2: Prepare and fill the roll-ups
Lay the steak slices or deli beef flat on a clean work surface or cutting board. Place one slice of cheese on top of each piece of beef, positioning it so it covers most of the surface.
Spoon a small amount of the sautéed vegetable mixture into the center of each slice. Roll the beef tightly around the filling, forming neat rolls. Secure with toothpicks if needed to prevent unrolling during cooking.
Step 3: Heat and melt
Return the skillet to medium heat. Place the roll-ups seam-side down in the pan. Cook for 2–3 minutes per side, turning gently, until the beef is lightly browned and the cheese inside is melted and gooey.
Oven option: Arrange roll-ups in a baking dish and bake at 180°C fan-forced for 10–12 minutes, until heated through and the cheese is fully melted.
Step 4: Serve hot
