1️⃣ Roast the Cauliflower
- Preheat oven to 425°F (220°C).
- Toss cauliflower florets with olive oil, paprika, salt, and pepper.
- Spread on a baking sheet and roast for 20–25 minutes, flipping once halfway, until golden and slightly crispy on the edges.
2️⃣ Glaze & Cook the Salmon
- In a small bowl, mix honey, chili flakes, soy sauce (if using), lemon juice, salt, and pepper.
- Coat the salmon with the glaze.
- Bake: Place on a lined tray and bake at 400°F (205°C) for 12–14 minutes.
OR Pan-Sear: Cook in a skillet over medium-high heat, 4–5 minutes per side, brushing glaze on top while cooking. - Spoon extra glaze over the salmon once done for added flavor and shine.
3️⃣ Sauté the Zucchini
- Heat olive oil in a skillet over medium heat.
- Add zucchini slices in a single layer and cook 2–3 minutes per side, until golden and tender.
- Season with salt, pepper, and optional garlic powder or herbs.
4️⃣ Build the Salad
- Combine mixed greens and chopped tomatoes in a bowl.
- Drizzle with olive oil and lemon juice or balsamic. Toss gently and season with salt and pepper to taste.
