Gluten-Free Lentil Cheese Bread (No Flour, No Yeast)

👨‍🍳 Instructions

  1. Soak the Lentils:
    Rinse and soak the lentils in water for at least 4 hours or overnight. Drain and rinse them again before using.
  2. Preheat the Oven:
    Set your oven to 375°F (190°C). Line a loaf pan or small baking dish with parchment paper, or lightly grease it.
  3. Blend the Batter:
    In a high-speed blender or food processor, combine the soaked lentils, eggs, yogurt, salt, garlic powder, and baking powder. Blend until smooth and creamy. Scrape down the sides as needed to ensure even blending.
  4. Add Cheese & Herbs:
    Transfer the mixture to a bowl. Stir in the grated Parmesan cheese and chopped parsley. Mix until evenly combined.
  5. Bake:
    Pour the batter into the prepared pan and smooth the top. Bake for 30–35 minutes, or until golden brown on top and a toothpick inserted in the center comes out clean.
  6. Cool & Serve:
    Allow the bread to cool in the pan for 10–15 minutes before removing and slicing. Serve warm or at room temperature.
