Season the Cod
Pat cod strips dry with paper towels. Season evenly with salt, pepper, paprika, and lime juice. -
Cook the Cod
Heat olive oil and butter in a large skillet over medium heat.
Add minced garlic and sauté for 30 seconds until fragrant (do not brown).
Add cod strips in a single layer and cook 2–3 minutes per side, until lightly golden and flaky. Remove from heat. -
Make the Sauce
In a small bowl, whisk together sweet chili sauce, lime juice, honey, soy or fish sauce, and garlic or ginger (if using). -
Finish & Serve
Drizzle sweet chili lime sauce over the cod or serve on the side. Spoon extra garlic butter from the pan over the top for maximum flavor.
