Instructions

  1. Prepare the Meringue: Begin by beating the egg whites in a clean bowl until they become foamy. Once foamy, gradually add the sugar and continue beating until stiff peaks form. This meringue will give the cake its light, airy texture.
  2. Prepare the Batter: In a separate bowl, heat the vegetable oil in the microwave for about 90 seconds on high or heat it on the stove for around 1 minute until warm. Once heated, add the flour and salt to the oil, and mix well to ensure the flour is completely incorporated. Then, add the egg yolks and milk to the mixture, stirring until the batter is smooth and well combined.
  3. Combine the Meringue with the Batter: Gradually fold the meringue into the batter bit by bit. Use a gentle folding motion to ensure that the air in the meringue is retained, which will help the cake stay fluffy. Be careful not to deflate the meringue as you mix.
  4. Prepare the Cake Tin: Line a baking tin with parchment paper. Pour the batter into the prepared tin and gently tap the tin on the counter a few times to release any trapped air bubbles. This step helps prevent air pockets in the cake, ensuring an even texture.
