Egg & Zucchini Rounds — Better Than Bread!

👨‍🍳 Directions

  1. Prepare the Mixture: In a large bowl, mix the grated zucchini (squeezed dry to remove excess moisture), eggs, almond flour, shredded cheese, chopped parsley (if using), and a pinch of salt and pepper. Stir until a thick batter forms.
  2. Shape the Rounds: Scoop spoonfuls of the batter and place them onto a parchment-lined baking sheet. Flatten them slightly with the back of the spoon to form small rounds.
  3. Bake: Bake at 375°F (190°C) for 15–18 minutes, or until the rounds are golden and firm to the touch. You can flip them halfway through if you prefer a more even crisp.
  4. Cool and Serve: Let the rounds cool slightly on the baking sheet — they will hold their shape perfectly! Serve as low-carb « buns » for sandwiches or enjoy them on their own as a snack.
