Prepare the base
Make sure the heavy cream is very cold before starting. Cold cream blends better and helps achieve a lighter, smoother popsicle texture.
Add the sweetened condensed milk, cold heavy cream, and your chosen flavoring into the bowl of a mixer. If using the optional emulsifier and neutral stabilizer, add one tablespoon of each at this stage. These help improve creaminess, structure, and reduce ice crystal formation.
Mix until smooth
Beat everything together on medium to high speed until fully combined, smooth, and slightly thickened. The mixture should look glossy and uniform, with no visible streaks of cream or powder. Avoid overmixing—stop as soon as the mixture is well blended and creamy.
Truffle-style option (optional)
If you’re making truffle-like popsicles, spoon your filling directly into the bottom of each popsicle mold before adding the creamy mixture. This creates a rich center or base layer once frozen.
Fill the molds
Carefully pour the popsicle mixture into the molds, leaving a small amount of space at the top to allow for expansion during freezing. Insert sticks and gently tap the molds on the counter to release any trapped air bubbles.
