Creamed Chipped Beef on Toast

Prepare the Beef

  1. Start by chopping the dried beef into small, bite-sized pieces. Dried beef can often be quite salty, so if you find that it’s overly salty, rinse the beef briefly in cold water and then pat it dry with a paper towel. This will help reduce some of the saltiness while retaining the rich, meaty flavor.

Make the Roux

  1. In a skillet, melt the unsalted butter over medium heat. Once the butter has melted, sprinkle in the all-purpose flour. Whisk the flour into the butter and cook for 1–2 minutes, until it turns a light golden color and develops a nutty aroma. This creates the roux, which acts as the base to thicken your creamy sauce.

Add Dairy

  1. Gradually whisk in the milk and heavy whipping cream. Stir constantly to ensure that the mixture stays smooth and that there are no lumps. Continue whisking until the sauce is fully incorporated, and let it simmer for about 5–7 minutes. During this time, the sauce will thicken and become creamy. Be sure to keep an eye on the sauce to prevent it from burning or sticking to the pan.
