Cranberry Pecan Cream Cheese Stuffed Celery Snow Logs

  1. Prepare the Filling: In a medium mixing bowl, add the softened cream cheese. Stir until smooth and creamy, making sure there are no lumps.
  2. Add the chopped dried cranberries, toasted pecans, honey, vanilla extract, cinnamon, and a small pinch of salt. Mix thoroughly until all ingredients are evenly distributed throughout the cream cheese mixture. The filling should be thick, creamy, and speckled with fruit and nuts.
  3. Prepare the Celery: Wash the celery stalks thoroughly and pat them dry. Trim off the ends, then cut each stalk into evenly sized pieces if desired for easier serving.

Filling, Garnishing & Serving

  1. Fill the Celery: Using a spoon or small spatula, generously fill each celery stalk with the cream cheese mixture, spreading it evenly from end to end.
  2. Garnish: If desired, sprinkle finely chopped fresh parsley over the top for a pop of green color and a fresh finish.
