Cozy Lasagna Soup with Mafalda Pasta – A Comforting One-Pot Meal

  1. Brown the beef: In a large soup pot or Dutch oven over medium heat, cook ground beef and diced onion until beef is browned and onions are soft. Drain excess grease if necessary.
  2. Add garlic and seasonings: Stir in garlic, basil, oregano, red pepper flakes, salt, and black pepper. Cook for 1 minute until fragrant.
  3. Simmer the broth: Add diced tomatoes, tomato sauce, and beef broth. Stir well to combine. Bring to a boil, then reduce heat and simmer uncovered for 10–15 minutes to develop flavor.
  4. Cook the pasta: Stir in the mafalda noodles and continue to simmer for 8–10 minutes, or until pasta is tender. Stir occasionally to prevent sticking.
  5. Serve: Ladle into bowls and top with a dollop of ricotta, a sprinkle of mozzarella or Parmesan, and fresh basil if desired. Serve hot with crusty bread.
