- Brown the beef: In a large soup pot or Dutch oven over medium heat, cook ground beef and diced onion until beef is browned and onions are soft. Drain excess grease if necessary.
- Add garlic and seasonings: Stir in garlic, basil, oregano, red pepper flakes, salt, and black pepper. Cook for 1 minute until fragrant.
- Simmer the broth: Add diced tomatoes, tomato sauce, and beef broth. Stir well to combine. Bring to a boil, then reduce heat and simmer uncovered for 10–15 minutes to develop flavor.
- Cook the pasta: Stir in the mafalda noodles and continue to simmer for 8–10 minutes, or until pasta is tender. Stir occasionally to prevent sticking.
- Serve: Ladle into bowls and top with a dollop of ricotta, a sprinkle of mozzarella or Parmesan, and fresh basil if desired. Serve hot with crusty bread.
