Condensed Milk Fluffy Bread

Instructions:

  1. Prepare the Dough Mixture: In a large bowl, mix together 1 large egg, 3 tablespoons of sweetened condensed milk (or 3 tablespoons of unsweetened condensed milk with 25g sugar), 1 teaspoon of yeast, and 0.6 cups of milk. Stir well until everything is thoroughly combined.
  2. Add Flour and Salt: Add the 2 cups of bread flour (or wheat flour) and 1/2 teaspoon of salt to the mixture. Stir until the dough begins to come together.
  3. Knead the Dough: Knead the dough by hand or using a stand mixer until it forms a ball. Once kneaded, let the dough rest for 20 minutes to allow it to relax and become easier to handle.
  4. Incorporate Butter: After the dough has rested, add 2 tablespoons of unsalted butter to the dough. Knead the butter into the dough first, then continue kneading until the dough is smooth and no longer sticky. It may feel sticky at first, but with continued kneading, it will become smooth and elastic.
  5. First Rise: Once the dough is smooth, shape it into a round ball, cover it with a damp cloth or plastic wrap, and let it rise for about 1 hour, or until it has doubled in size.
  6. Divide and Rest the Dough: After the dough has fermented, punch it down to deflate it. Flatten the dough and divide it into 6 equal pieces. Roll each piece into a ball and let them rest for about 15 minutes to relax the gluten.
  7. Shape the Dough: After 15 minutes, take each piece of dough and deflate it gently. Roll each piece out into a long strip. Flip the dough sheet over and flatten one side. Then, form a rectangle shape by pressing and folding the dough. Roll the dough from the other side, forming a tight roll.
  8. Place in Baking Dish: Once all the dough pieces are rolled up, arrange them in a 20x20cm (8×8 inch) baking dish. The dough should be snug in the dish but not overcrowded. Cover the dish and let the dough rise for another 50 minutes, or until it has puffed up and nearly doubled in size.
  9. Bake the Bread: Preheat your oven to 340°F (170°C). Once the dough has finished its second rise, brush the top with an egg wash made from 1 beaten egg and a little water. Bake the bread in the preheated oven for about 20 minutes, or until the top is golden brown and the bread sounds hollow when tapped.
  10. Cool and Serve: After baking, remove the bread from the oven and allow it to cool in the pan for a few minutes. Then transfer the bread to a wire rack to cool completely. Once cooled, slice and enjoy!
