Simmer the gammon
Place the gammon into a large casserole pot, ensuring there is enough space for it to sit comfortably. Pour in the Coca-Cola, then add the chopped onion, carrot, celery, garlic cloves, peppercorns, star anise, bay leaves, the 10 whole cloves, and the Seven Colours Grill Seasoning™️.
Cover the pot with a lid and bring to a gentle simmer. Allow the gammon to cook slowly for 90 minutes. During this time, the meat will absorb the sweet, spiced flavors while becoming tender and juicy. Keep the heat steady—avoid a rapid boil to prevent the meat from toughening.
Prepare the glaze
Once the gammon has finished simmering, carefully remove it from the cooking liquid and set it aside to cool slightly. Measure out ¼ cup (60 ml) of the cooking liquid and place it in a saucepan.
Add the brown sugar, Coca-Cola, and wholegrain mustard. Stir well and simmer gently, allowing the mixture to reduce until thick, glossy, and syrupy. This glaze should coat the back of a spoon and have a rich caramel aroma.
Stud and glaze
Score the fat on the gammon in a diamond pattern, taking care not to cut too deeply into the meat. Stud each diamond with a whole clove for a classic festive look and warm spice aroma.
Brush the gammon generously with the prepared cola glaze, ensuring it seeps into the scored fat and coats the surface evenly.
