1. Boil the Sweet Potato
- Place the whole sweet potato in a pot and cover with water.
- Bring to a boil and cook for 40–50 minutes, or until fork tender.
- Remove from heat, run under cold water, peel off the skin, and discard.
2. Prepare the Filling
- Preheat oven to 350°F (175°C).
- Break apart the sweet potato in a large bowl and mash.
- Add softened butter and mix with an electric mixer until smooth.
- Add sugar, condensed milk, eggs, vanilla, nutmeg, cinnamon, and salt. Beat on medium speed until completely smooth and creamy.
3. Assemble & Bake
- Pour the filling into your unbaked 9-inch pie crust.
- Bake for 55–60 minutes, or until a knife inserted into the center comes out clean.
- Cool before serving. Enjoy warm or chilled with whipped cream if desired.
