Chocolate Muffins

    1. Start by preparing your ingredients. In a medium-sized bowl, crack the 2 eggs and add the 90g of sugar. Whisk the eggs and sugar together until the mixture is smooth and the sugar is dissolved. This step is important for creating a light, airy texture in the muffins.
    2. Once the eggs and sugar are well mixed, add 85g of melted butter to the bowl. Whisk the mixture again to combine the butter with the egg and sugar. The melted butter adds richness and moisture to the muffins.
    3. Next, pour in the 120ml of milk and mix well. The milk helps create a smooth batter and contributes to the softness of the muffins. Once all the wet ingredients are incorporated, you’re ready to add the dry ingredients.
    4. In a separate bowl, sift together the 160g of flour, 40g of unsweetened cocoa powder, and 1 packet of baking powder. Adding a pinch of salt to the mixture will balance the sweetness and enhance the chocolate flavor. Sifting these ingredients together ensures that they are evenly mixed and prevents any lumps in the batter.
    5. Gradually add the sifted dry ingredients into the wet ingredients. Stir gently to combine until the flour mixture is fully incorporated, but be careful not to overmix, as this could result in dense muffins. The batter should be thick but smooth.
    6. Once the batter is well combined, fold in the 100g of chocolate chips. This adds pockets of melty chocolate throughout the muffins, making them extra indulgent. Mix the batter just enough to evenly distribute the chocolate chips.
    7. Prepare your muffin tin by placing muffin liners in each slot or greasing the tin. Spoon the batter into the muffin tin, filling each cup about 2/3 full. For an extra touch of decadence, place a few pieces of dark chocolate on top of the muffins before baking. This will melt into a glossy chocolate topping.
    8. Preheat your oven to 200°C (390°F) for 5 minutes, allowing the temperature to stabilize. After 5 minutes, reduce the heat to 180°C (350°F) and bake the muffins for 15 to 16 minutes. Check for doneness by inserting a toothpick into the center of a muffin. If it comes out clean or with just a few moist crumbs, the muffins are ready. Keep an eye on them towards the end of the baking time to prevent overbaking.
