1️⃣ Make the Dough
- Mix the yeast, lukewarm water, and sugar in a bowl. Let rest for 5–10 minutes until foamy.
- In another bowl, combine the flour and salt. Make a well in the center and add olive oil and the yeast mixture.
- Knead for 8–10 minutes until smooth and elastic. Cover and let rise for 1 hour, or until doubled in volume.
2️⃣ Prepare the Filling
- Heat olive oil in a pan. Sauté the onion and garlic until translucent.
- Add chicken, season with salt, pepper, and curry powder. Cook until golden and fully cooked.
- Remove from heat. Stir in cream or yogurt and mix well. Let it cool slightly.
- Fold in the grated mozzarella and chopped coriander if using.
