- Prep the feta: Gently pat the feta block dry using paper towels to remove excess moisture. This helps the surface caramelize without too much splattering and ensures a better sear.
- Toast the walnuts: In a dry skillet over medium heat, toast the chopped walnuts for 2â3 minutes until golden brown and fragrant. Stir occasionally to prevent burning. Once toasted, remove from the pan and set aside.
- Heat the skillet: Add the olive oil to the skillet and place over medium heat. Once the oil is shimmering, carefully add the feta block.
- Caramelize the feta: Sear the feta for 2â3 minutes per side, or until golden brown and lightly crisped. Flip gently using a spatula to keep the block intact. The outside should become golden and slightly crusty, while the inside softens and warms through.
- Make the glaze: In a small bowl, stir together the honey, chili flakes, smoked paprika, and lemon juice. Once the feta is seared on both sides, pour the glaze over and around the feta in the skillet.
- Simmer and spoon: Let the glaze bubble gently for 30â60 seconds. Use a spoon to baste the hot glaze over the feta repeatedly, letting it caramelize and coat the cheese evenly. The aroma should be sweet, spicy, and smoky.
