Cajun Salmon with Garlic Mash and Shrimp Veggie Medley

  • Shrimp, peeled and deveined
  • Broccoli florets
  • Carrot slices
  • Bell peppers, sliced
  • Garlic, minced
  • Olive oil
  • Salt and pepper
  • Chopped parsley (optional)

Instructions

Cook the Cajun Salmon

  1. Pat the salmon fillets dry with paper towels to ensure proper searing. Rub each fillet lightly with olive oil, coating all sides evenly so the seasoning adheres well.
  2. Season the salmon generously with Cajun seasoning, paprika, and a light pinch of salt. Press the spices gently into the surface of the fish to form an even coating.
  3. Heat a pan over medium-high heat until hot. Place the salmon fillets in the pan and cook for 3–4 minutes per side. The exterior should develop a dark, lightly blackened crust while the interior becomes opaque and flakes easily with a fork.
  4. Remove the salmon from the heat and finish with a squeeze of fresh lemon juice just before serving to brighten the bold Cajun flavors.
