Cook the Chicken
Cut chicken into cubes and season with salt and pepper. Heat olive oil in a skillet over medium-high heat. Add chicken and cook until fully done. Stir in ¼ cup wing sauce, coat well, and simmer 1–2 minutes. Remove from heat and let cool slightly. -
Prepare the Dough
Preheat oven to 425°F (see note below). On a well-floured surface, roll pizza dough into a long rectangle. -
Assemble
Spread ranch or blue cheese dressing evenly over the dough. Drizzle with remaining ¼ cup wing sauce. Add chicken, then top with mozzarella and cheddar. (Optional: drizzle a little extra wing sauce for more heat.) -
Roll & Bake
Roll dough tightly like a pinwheel, tucking in the ends to prevent leaking. Place seam-side down on a lightly greased baking sheet.
Bake 20–25 minutes, until golden brown. -
Rest & Serve
Let sit 5 minutes before slicing. Serve warm.
