Blueberry Fritter Bites with Glaze

👩‍🍳 Instructions

1. Preheat Oven:

Preheat your oven to 350°F (175°C). Lightly grease a mini muffin pan or line with paper cups.

2. Prepare the Batter:

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, mix the melted butter, egg, vanilla extract, and blueberry Greek yogurt until smooth.
  3. Gradually add the wet ingredients to the dry ingredients and stir until just combined. Fold in the blueberries gently to avoid bursting.

3. Bake:

  1. Scoop the batter evenly into the muffin cups.
  2. Bake for 15 minutes, or until the tops are golden brown and a toothpick comes out clean.
  3. Optional: For crispier tops, broil for 3–4 minutes after baking.

4. Make the Glaze:

In a small bowl, whisk together powdered sugar, milk, and blueberry jam until smooth and pourable.
