Filling:

  • 1 cup packed dark brown sugar (200g)
  • 2 Tbsp ground cinnamon (16g)
  • ¼ tsp fine salt (2g)
  • ½ cup unsalted butter, softened (113g)
  • ⅓ cup cookie butter, melted (66g)

Dough:

  • 4¼ cups all-purpose flour (550g), plus up to ½ cup extra as needed
  • 2 packets instant dry yeast (4½ tsp / 14g)
  • 1 tsp fine salt (6g)
  • 1 cup whole milk (240ml)
  • ½ cup unsalted butter, room temp (113g)
  • ½ cup granulated sugar (100g)
  • 2 large eggs, room temp (112g)

Frosting:

  • ½ cup unsalted butter, room temp (113g)
  • 2 tsp vanilla extract or paste (8ml)
  • ¼ tsp fine salt (1g)
  • 1½ cups powdered sugar (190g)
  • 3 Tbsp heavy cream, room temp (45ml)
  • ¼ cup cookie butter, melted (50g)
  • ½ cup chopped Biscoff cookies (50g), for topping
