1ļøā£ Prepare the Filling
- Peel and dice the apples into small pieces.
- In a pan, melt the butter over medium heat. Add sugar and cinnamon (if using), then stir in the diced apples.
- Cook for 7ā8 minutes until the apples are tender and caramelized, stirring occasionally.
- Remove from heat and let cool slightly.
2ļøā£ Make the Sponge Cake
- Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
- Separate the egg whites from the yolks. In a large bowl, beat the egg yolks with sugar and vanilla until pale and fluffy.
- In a separate bowl, whip the egg whites until stiff peaks form.
- Gently fold the whipped egg whites into the yolk mixture until smooth and well-combined.
- Sift together the flour and baking powder, then gently fold them into the batter using a spatula.
- Spread the batter evenly on the prepared baking tray.
- Bake for 8ā10 minutes, or until the sponge is set and soft (donāt overbake!).
3ļøā£ Roll and Fill
- Turn the hot sponge cake out onto a clean, damp kitchen towel.
- Carefully peel off the parchment paper and immediately roll the sponge in the towel.
- Let it cool slightly in the towel to maintain its shape.
- Unroll the sponge and spread the caramelized apples evenly over the surface.
- Roll the sponge back up tightly, enclosing the filling.
