Chipotle Lime Shrimp Tacos
Ingredients
For the Shrimp:

1 lb (450g) large shrimp, peeled and deveined

1–2 tsp chipotle chili powder (adjust to taste)

1 tbsp olive oil

2 garlic cloves, minced

Juice of 1 lime

Salt and black pepper, to taste

For the Tacos:

8 small corn or flour tortillas

1 cup shredded lettuce or cabbage

1/2 cup diced tomatoes or pico de gallo

1/4 cup crumbled queso fresco or feta (optional)

2 tbsp chopped fresh cilantro

Optional Toppings:

Lime wedges

Sour cream or avocado slices

Instructions

Marinate the shrimp:
In a bowl, combine shrimp with chipotle chili powder, olive oil, garlic, lime juice, salt, and pepper. Toss well and let sit for 10–15 minutes.
