- Brown the beef:
In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and fully cooked. Drain any excess grease. - Add flavor:
Stir in the green chilies, enchilada sauce, and cream cheese. Mix until everything is fully combined and the cream cheese has melted into the mixture. Let simmer for a few minutes to thicken slightly. - Layer the casserole:
Preheat oven to 350°F (175°C). In a greased 9×13-inch baking dish, layer the ingredients as follows:- First, a layer of Fritos corn chips (enough to cover the bottom)
- Next, spread the warm meat mixture evenly on top
- Then sprinkle generously with shredded cheese
- Bake:
Bake uncovered for 15–20 minutes, or until the cheese is melted and bubbly. - Add toppings:
Remove from oven and let cool slightly. Top individual servings with shredded lettuce, diced tomatoes, salsa, and sour cream as desired.
