Ube Waffles with Coconut Whipped Cream

👩‍🍳 Instructions

Step 1: Preheat the Waffle Iron

Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease it with oil or nonstick spray if needed.

Step 2: Make the Ube Waffle Batter

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk the milk, ube purée, eggs, melted coconut oil or butter, and vanilla until smooth.
  3. Gradually add the wet mixture to the dry ingredients, stirring until just combined. Do not overmix.

Step 3: Cook the Waffles

  1. Pour batter into the preheated waffle iron, using enough to just cover the bottom plate.
  2. Cook for 4–6 minutes, or until the waffle is set and lightly crisp. Repeat with remaining batter.
