These Chicken and Curry Calzones

  • 1 egg yolk (for glazing)

👩‍🍳 Preparation

1️⃣ Prepare the Dough

  1. In a bowl, mix the yeast, lukewarm water, and sugar. Let sit for 5–10 minutes until foamy.
  2. In another bowl, combine flour and salt. Make a well in the center, pour in the olive oil and yeast mixture.
  3. Knead the dough for 8–10 minutes until smooth and elastic.
  4. Cover with a clean towel and let rise in a warm place for 1 hour, or until doubled in volume.

2️⃣ Make the Filling

  1. Heat olive oil in a skillet over medium heat. Sauté onion and garlic until soft and translucent.
  2. Add diced chicken. Season with salt, pepper, and curry powder. Cook until golden and fully cooked through.
  3. Remove from heat and stir in the cream or yogurt. Let cool slightly.
  4. Mix in grated mozzarella and chopped coriander, if using.

3️⃣ Assemble the Calzones

  1. Preheat your air fryer to 180°C (350°F) for 5 minutes.
  2. Punch down the risen dough and divide into 4 equal portions.
  3. Roll each piece into a 15 cm (6-inch) circle.
  4. Spoon the filling onto the center, leaving a 2 cm (¾ inch) border.
  5. Fold into a half-moon shape. Seal edges by pressing with fingers, then crimp with a fork.
  6. Brush tops with egg yolk for a golden finish.
