👩🍳 Preparation
1️⃣ Prepare the Dough
- In a bowl, mix the yeast, lukewarm water, and sugar. Let sit for 5–10 minutes until foamy.
- In another bowl, combine flour and salt. Make a well in the center, pour in the olive oil and yeast mixture.
- Knead the dough for 8–10 minutes until smooth and elastic.
- Cover with a clean towel and let rise in a warm place for 1 hour, or until doubled in volume.
2️⃣ Make the Filling
- Heat olive oil in a skillet over medium heat. Sauté onion and garlic until soft and translucent.
- Add diced chicken. Season with salt, pepper, and curry powder. Cook until golden and fully cooked through.
- Remove from heat and stir in the cream or yogurt. Let cool slightly.
- Mix in grated mozzarella and chopped coriander, if using.
3️⃣ Assemble the Calzones
- Preheat your air fryer to 180°C (350°F) for 5 minutes.
- Punch down the risen dough and divide into 4 equal portions.
- Roll each piece into a 15 cm (6-inch) circle.
- Spoon the filling onto the center, leaving a 2 cm (¾ inch) border.
- Fold into a half-moon shape. Seal edges by pressing with fingers, then crimp with a fork.
- Brush tops with egg yolk for a golden finish.
