Instructions
1️⃣ Prep and Preheat
- Preheat oven to 350°F (175°C).
- Line a baking sheet or large casserole dish with aluminum foil and spray with non-stick cooking spray.
2️⃣ Make the Meatloaf Mixture
- In a large bowl, combine ground beef, breadcrumbs, eggs, diced onion, garlic powder, parsley, salt, pepper, and honey BBQ sauce.
- Mix thoroughly until everything is well blended. Use your hands or a sturdy spoon for best results.
3️⃣ Shape and Fill
- On the prepared pan, shape half of the meat mixture into a rough 8×4 inch loaf. Use your hands to press a cavity into the center, leaving at least 1 inch of meat around the edges.
- In a small bowl, combine the macaroni and cheese with the shredded mozzarella.
- Spoon the mac and cheese mixture into the cavity of the meatloaf.
- Cover with the remaining meat mixture, sealing all sides carefully so the filling is enclosed. Smooth out the top and reshape into a neat loaf.
4️⃣ Bake and Glaze
- Bake the meatloaf at 350°F (175°C) for 40 minutes.
- While baking, mix ketchup, brown sugar, and yellow mustard in a small bowl for the glaze.
- After 40 minutes, remove the meatloaf from the oven and increase temperature to 400°F (200°C).
- Spoon or brush the glaze evenly over the top of the meatloaf.
- Return to the oven and bake an additional 10–15 minutes, or until the internal temperature reaches 160–165°F (71–74°C) and the glaze is bubbly.
5️⃣ Rest and Serve
- Remove from oven and allow the meatloaf to rest for 5–10 minutes before slicing. This helps the juices redistribute and keeps it moist.
- Slice thickly to showcase the molten mac and cheese center and serve warm.
